Please note that the content of this book primarily consists of articles available from Wikipedia or other free sources online. Sprattus is a genus of small oily fish of the family Clupeidae. One can find many varieties served from the Iberian peninsula to the Caucasus. They are commonly fried and eaten in British and Bulgarian cuisine. In northern and north-eastern Europe, European sprats are commonly smoked and preserved in oil, which retains a strong smoky flavor. They have also been often passed for other fish: for instance, the products sold as "anchovies" (since the 19th century) and "sardines" have often been prepared from sprats, as the authentic ones used to be less accessible.
