Post-harvest Technologies are very important in proper handling of food products right from the farm to the final consumer. Quantitative and qualitative losses of food products throughout the supply chain decrease significantly food availability and accessibility both on the local and national markets, resulting into food insecurity. Crop intensification programs alone do not suffice to guarantee food security most especially in the developing world. This should be supplemented by adoption of modern and appropriate technologies suitable for different food crops to ensure that quantity and quality of food products are preserved. This book presents the post-harvest technologies adopted by maize smallholder farmers in Kirehe District in Rwanda and how this contributed to household food security.
